Valentine Cookies

Every year I say I'll never make them again. Any self control that I thought was still around gets completely obliterated. Honestly, just taking the photos I ate five. Okay, eight. But Valentines Day only comes once a year, right?

Here's the recipe for one of my most favorite ever cookies, introduced by a dear friend.

Valentine Sugar Cookies

1 1/2 cups powdered sugar
1 cup butter, softened
1 egg
1 teaspoon vanilla
1/2 teaspoon almond extract
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar

Beat sugar and butter. Add egg and extracts; mix thoroughly. Blend in dry ingredients. Refrigerate 2-3 hours. Heat oven to 350 F. Roll dough 3/16 inch thick. Cut with cookie cutters. Bake "Blonde", about 8-10 minutes. Cool, then spread with thin icing.

Thin Icing

Powdered sugar
Marachino cherry juice
1/2 teaspoon almond extract

Mix these three ingredients in a ratio of your choice to get a nice spreadable icing consistency.
